Vegan Baker Opens Business in Echo Park

A local baker has launched a new business for vegans who have a sweet tooth.

Bramble Bakeshop begins taking orders Wednesday for cakes, cupcakes and other treats made with seasonal organic ingredients from farmers markets and without high-fructose corn syrup and preservatives.

At the helm is Miel Bredouw, former sous chef at Mohawk Bend. It was there when she came across patrons who were vegan and throwing parties. She said part of motivation came from talking with them.

"They were like, 'you can bake a vegan cake?'" She told Patch.

She's now taking orders and baking out of her Echo Park home for deliveries and pickup orders made 48 hours in advance.

Another of her signature dishes include cornbread muffins stuffed with jackfruit, a vegan substitute for meat.
